Red Cabbage

Knob of butter
2 tbsp olive oil
1 onion
1 tsp cinnamon
1 tsp nutmeg
1 red cabbage
3 tbsp brown sugar
3 apples
100ml red wine vinegar
250ml red wine

Heat the butter and oil in a large lidded saucepan. When hot, add the onion and fry gently until softened. Stir in the cinnamon & nutmeg. Add the cabbage and fry for 3–4 minutes, stirring occasionally, until glossy.

Stir in the sugar, apples, red wine and red wine vinegar. Cover with a lid and let it cook gently for 1 hour+
